What is gazpacho?
Gazpacho is a cold Spanish soup typically made from pureed vegetables, such as tomatoes, peppers, cucumbers, and onions, and often served with a garnish of croutons, chopped herbs, or diced vegetables. It is usually seasoned with olive oil, garlic, vinegar, and salt.

How do you make gazpacho?

Ingredients:

- 4 large tomatoes, diced
- 1 red or green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh basil
- 2 tablespoons chopped fresh oregano
- 1/4 cup chopped fresh parsley
- 1 cup tomato juice
- 2 tablespoons freshly squeezed lemon juice

Instructions:

1. In a large bowl, combine the tomatoes, bell pepper, onion, garlic, olive oil, red wine vinegar, salt, pepper, basil, oregano and parsley. Mix until combined.

2. Add the tomato juice and lemon juice and stir until combined.

3. Refrigerate for at least 2 hours, or overnight.

4. Serve chilled. Enjoy!
